In the countryside of France, labyrinths of caves and tunnels have been used to store some of the world’s finest wine for centuries. Experience has shown that these underground caverns possess the ideal climatic conditions for wine storage, with constant temperatures of 15 degrees Celsius and relative humidity of around 65%. 
Unfortunately, these conditions are rare in Australia. Our harsh climate and wide variations in temperature cause the wine and cork to expand and contract, allowing the air outside the bottle to come in contact with the wine inside. The result is oxidation that causes the wine to age prematurely (and not very gracefully at all!). At 25 degrees Celsius, your wine matures too quickly and virtually cooks itself; below 10 degrees Celsius, maturation virtually comes to a standstill. Vibration and strong light are also enemies of fine wine.
